Mostaccioli with roasted garlic sauce - 1 large bulb garlic, unpeeled, 3 tablespoons olive oil, 8 ounces stater bros. Mostaccioli, 4 medium plum tomatoes, 3/4 pound asparagus, 1/2 teaspoon sugar, 3/4 teaspoon salt, 1/4 teaspoon pepper, 2 tablespoons butter, 1/2 cup crumbled goat cheese, 1/4 cup toasted pine nuts. Preheat oven to 400 degrees. Remove loose outer skin from garlic bulb and cut 1/2 inch off the top to just expose the inner cloves. Place garlic on a square of foil on a small pan. Drizzle 1 teaspoon oil over exposed garlic; Wrap foil around bulb to cover and roast 30 to 35 minutes or until cloves are soft. While garlic is roasting, prepare pasta according to package directions. Meanwhile, cut each tomato into 8 chunks; Trim asparagus and cut into 1-inch pieces. Place vegetables on a broiler pan. Combine sugar, 1/2 teaspoon salt and pepper; Sprinkle over vegetables. While garlic cools slightly, heat broiler and broil vegetables 8-10 minutes or until soft and starting to brown, turning once. Place remaining olive oil and butter in a small microwave safe bowl; Microwave on high 1 minute or until butter is melted. Squeeze roasted garlic into oil and butter and add remaining 1/4 teaspoon salt; Stir until blended. Place hot, drained pasta in a large bowl; Add garlic mixture and toss to coat. Gently fold in tomatoes and asparagus. Top with goat cheese and pine nuts. Makes 4-6 servings.
