coconut lime bars - ingredients: 1 package (5 oz) stater bros. Unsweetened coconut flakes, 1 cup (2 sticks) butter, softened, 2-3/4 cups sugar, divided 2-1/4 cups flour, divided, 1/4 teaspoon salt, 4 eggs, 1/3 cup fresh lime juice, 2 teaspoons freshly grated lime rind, 1 drop green food color, optional, directions: preheat oven to 350°f. Spread coconut in a layer on a shallow baking sheet. Bake 5 to 6 minutes, tossing after 3 minutes, until lightly browned; Cool completely. Combine butter and 3/4 cup sugar in a large bowl. Using electric mixer; Beat until blended. Add 2 cups flour and salt, continue beating until soft dough forms stir in 1 cup toasted coconut and press mixture evenly onto bottom of an ungreased 13 x 9 inch baking pan; Bake 15 minutes. Reduce oven to 325°f. Combine eggs, 2 cups sugar, 1/4 cup flour, lime juice, lime rind and food coloring in a large bowl, beat until smooth. Pour egg mixture over crust, sprinkle with remaining coconut; Bake 25 minutes. Cool completely before cutting into bars. Make 3 dozen bars
