ice cream crunchballs - 2 cups stater bros. Honey & oats with almonds cereal crushed to 1 cup, 1/4 cup peanut butter, 1 tbsp sugar, 1/4 tsp ground cinnamon, 1 qt chocolate or vanilla low-fat ice cream or frozen yogurt, hot fudge ice cream topping, optional, directions: combine cereal, peanut butter, sugar and cinnamon; Mix well. Scoop frozen yogurt with no. 40 ice cream scoop or shape into 1-1/2 inch balls. Roll balls in cereal mixture; Place on wax paper lined baking sheets. Freeze until firm. Serve with hot fudge topping. Store covered in freezer. Variations: apple crunchballs: use vanilla frozen yogurt. Top with warm chunky applesauce or apple pie filling. Strawberry crunchballs: use strawberry ice cream. Top with strawberry ice cream topping and serve with fresh strawberries. Makes 16 crunchballs
