hearty banana wheat bread - 1 cup sugar, 1/2 cup vegetable oil, 2 eggs, 4 tbsp buttermilk (3-1/2 tbsp milk mixed with 1/2 tsp vinegar or lemon juice may be substituted for buttermilk), 4 very ripe bananas, mashed, 1 tsp baking soda, 1 cup all-purpose flour, 2 cups stater bros. Bite size frosted shredded wheat cereal, crushed, 1/2 tsp salt, 1 cup coarsely chopped walnuts. Directions: heat over to 350° f. In a large bowl, cream sugar and oil. Add eggs, buttermilk and mashed bananas. In a medium bowl, combine baking soda, flour, cereal and salt. Add cereal mixture to sugar mixture, stirring until just combined. Add walnuts. Pour patter into a greased 9x5 inch loaf pan. Bake for 60 to 75 minutes or until toothpick inserted in center comes out clean. Makes 12 servings
