hearty beef vegetable soup - ingredients: 6 cups stater bros. Beef broth, 4 strips bacon, chopped*, 1 lb boneless, trimmed beef chuck cut into 1/2" to 3/4" cubes, 1 cup thinly sliced baby bella (crimini) mushrooms, 1/2 cup coarsely chopped onion, 2 bay leaves, 1-1/2 cups cut fresh green beans, 1-1/2 cups cubed rutabaga, 1 cup sliced carrot, 1/2 cup sliced celery, 2 cups diced, peeled potatoes, salt & pepper to taste. Preparation instructions: saute bacon in stockpot until crisp. Remove bacon and drain on paper towels, set aside. Cook beef cubes in bacon fat in pot until browned on all sides. Add mushrooms and onion, continue cooking until vegetables are soft. Add broth and bay leaves, bring to a boil. Reduce heat to low, cover and simmer 45 to 50 minutes or until beef cubes are almost tender. Add green beans, rutabaga, carrots and celery, continue cooking, covered, 20 minutes. Add potatoes and continue cooking, uncovered, 15 minutes or until all vegetables are tender. Remove bay leaves, stir in bacon and season with salt and pepper to taste. Makes 6 servings *omit bacon, if desired and use 2 tbsp oil for browning beef.
