Directions
Soaking Methods: To 1 lb (about 2 cups) of beans add 8 cups of hot water. Boil for 2 minutes. Remove from heat. Cover and let stand 1 hour. Or let stand in 8 cups cold water overnight for at least 8 hours. Drain and rinse beans. Cooking: Add 6 cups water to drained and rinsed beans. Simmer gently with a lid until desired tenderness is reached, about 1-1/2 to 2 hours. 16 Bean Soup with Ham: 1 lb pkg 16 Bean Soup; ham bone with 2-1/2 to 3 cups diced ham (or 2 ham hocks); 1 medium onion, chopped; 1/2 tsp chopped garlic; 1 bay leaf; 14 oz can of diced stewed tomatoes; 3 quarts of water; salt and pepper to taste. Soak beans overnight, wash, drain. Add all above ingredients into Dutch oven, bring to a boil. After boiling, turn heat to Low and simmer for 2 hours, until beans are soft.
