Directions
Includes - Seasoned rice & sauce. You Will Need: 1-1/2 cups water; 2 to 4 frozen uncooked boneless skinless chicken breasts (about 1 lb). Be sure to remove all packaging material from chicken before placing in dish! Combine your frozen chicken + our rice & sauce = bake in one dish. 1. Heat oven to 425 degrees F. 2. Pour seasoned rice into ungreased 13 x 9-inch glass baking dish (Dark or nonstick pan can also be used. For shiny metal pan, increase bake time to 50 to 60 minutes). Add water. 3. Place frozen chicken breasts on top of rice. Pour roasted tomato sauce over chicken. 4. Cover dish with foil. Bake 40 to 50 minutes or until rice is no longer pink in center (165 degrees F). Fluff rice and slice chicken before serving. Refrigerate leftovers. You can use fresh chicken breasts! For fresh or thawed chicken, make as directed above-except decrease the amount of water to 1-1/4 cups and bake 25 to 35 minutes. For shiny metal pan, bake 35 to 45 minutes. Make it your own! After baking, squeeze juice of half a lime over rice, and top with chopped avocado. Top with chopped avocado!
