Sauce: Red Curry Paste (Red Chili, Garlic, Lemongrass, Galangal (Thai Ginger), Salt, Shallot, Spices (Including Black Pepper), and Kaffir Lime), Water, Brown Sugar, Fish Sauce (Anchovy Fish, Salt, Sugar), Red Chili, Soybean Oil, Citric and Malic Acid (as Preservatives). Rice: Thai Jasmine Rice. Coconut Milk: Coconut, Water, Guar Gum (Natural Emulsifier).
Directions
Prep Time: 10 minutes. Cook Time: 20 minutes. You Will Need: 1 pouch jasmine rice. 1 can coconut milk. 1 pouch Red Curry Sauce. 1-3/4 cups water. 8 oz cubed chicken breasts or peeled and deveined shrimp. 1 cup assorted vegetables, such as snap peas, bamboo shoots and sliced red bell pepper. Fresh red chilies, thinly sliced (optional). 1. Bring water to boil in medium saucepan. Stir in rice. Reduce heat to medium-low; cover and simmer 15 minutes or until rice is tender, stirring occasionally. Remove from heat. Let stand 5 minutes before serving. 2. Meanwhile, bring coconut milk to simmer in medium nonstick skillet on medium heat. Add curry sauce; stir until well blended. Bring to boil. Reduce heat to low; simmer 5 minutes. 3. Stir in chicken and vegetables. Cook 3 to 5 minutes on medium heat or until vegetables are tender-crisp and chicken is cooked through. Serve with cooked rice. Garnish with red chili slices, if desired. Makes 5 (1-cup) servings.
