Types of arrack

Also known as palm wine, this type of arrack is made from palm sap, which is released by the stems of a coconut tree when the buds are removed. People call the sap toddy, and toddy tappers climb the trees up to 80 feet to harvest it. Distilled arrack with honey and citrus is called arak madu. Hindus often use these drinks in religious ceremonies, and they're usually diluted with up to 70% water. Batavia arrack comes from the island of Java, and it's made with molasses, a byproduct of sugarcane production. The earliest known type of arrack, it's also made with water, dried cakes of red rice, yeast, and other fungi. Like Ceylon arrack, it's usually aged in wood barrels or vats before sale.
The name Batavia comes from the Dutch name for the capital of Indonesia. Today, it's called Jakarta, and many manufacturers still make arrack there. The Dutch East India Company traded arrack, and it's still popular in the Netherlands. In Egypt, arrack is made from dates. In Mongolia, it's known as airag or koumiss, a traditional wine made from fermented mare's milk. It only yields about one-tenth of the alcohol of a substance with more starches like sugarcane. It's usually distilled once, but some Mongolian arrack undergoes two or three distillations.
