About Cachaca
Cachaca is the national spirit of Brazil. Cachaca is a distilled spirit made from fermented sugarcane juice. To be labeled a Cachaca, a spirit must be produced in Brazil, made from freshly-pressed sugarcane juice, and have an ABV between 38-48%.
Cachaca has crisp, fruity flavors. The sugarcane growing region, the wood used in the aging barrel, and the length of aging affect the color and flavors of Cachaca. Young, un-aged Cachaca is usually clear. Cachaca deepens to a gold or amber color after barrel aging.
Types of Cachaca
Branca (white) Cachaca is typically un-aged or stored in stainless steel tanks. Branca may also refer to Cachaca aged in wood that does not affect its color, such as peanut, Jequitiba, and Freijo These. When choosing a Branca Cachaca, look for classic, traditional, or silver on the label. If you are trying Cachaca for the first time and enjoy rum, look for a Branca. Popular examples of Branca Cachaca include Novo Fogo Organic Silver Cachaca and Yaguara Natural Small Productino Cachaca Branca.
Amarela (yellow) Cachaca ages for a minimum of one year in a Brazilian hardwood barrel. The hardwood used determines the Cachaca's unique flavors and colors. Amburana wood adds cinnamon, while balm wood makes the Cachaca greenish-gold and adds a clove flavor. Amarela Cachacas can be labeled Premium (aged 1-3 years) or Extra Premium (aged 3 years or more). Amarala Cachacas may also be labeled as gold or aged. Amarela Cachacas are popular with those who enjoy whiskey or bourbon. Good examples of Amarela Cachaca include Velho Barreiro Gold Cachaca and Novo Fogo Tanager Cachaca.
How to serve Cachaca
Most of the Cachaca available in the United States is premium quality or better, making it perfect for straight sipping. You can enjoy Cachaca neat, over ice, or mixed with fruit juice.
Cachaca is best known as the main ingredient in the Caipirinha, the national drink of Brazil. The Caipirinha is made from Cachaca, sugar, and muddled lime. The Batida is another popular Cachaca cocktail made from Cachaca, coconut milk, lime juice, and passion fruit syrup. Cachaca is also a good substitute for rum in cocktails.
Cachaca pairs well with fresh fish dishes, Mexican food, and fresh fruit. The Caipirinha is a great drink to enjoy with spicy, rich dishes of beef and pork. In Brazil, the Caipirinha is often paired with a rich beef and pork stew known as Feijoada.
