About unflavored tequila
Tequila is a distilled spirit made by cooking the core of the blue agave plant and extracting the sugars. Tequila is manufactured in one of five Mexican states: Jalisco, Guanajuato, Tamaulipas, Michoacan, or Nayarit. Jalisco is the birthplace and producer of 99% of tequila on the marketplace today. By law, tequila must have an ABV between 35-55% when bottled. Most tequila sold in the United States has a minimum ABV of 40%.
The prominent flavors in tequila vary depending on where the agave plant was grown. Agave from Jalisco tends to be sweet and fruity, while agave from the lowland states tends to have earthy flavors. Aging a tequila in a barrel also makes it smoky and more complex over time.
Types of unflavored tequila
When looking for quality tequila, look for those with "100% blue agave" on the label. Be wary of brands labeled "Mixto," as these contain roughly half tequila and half cheaper alcohols.
- Plata ("silver") tequila is unaged or kept in neutral tanks for under 2 months. Plata is clear with bold flavors, making it a great addition to cocktails. Plata might also be labeled blanco tequila. Sauza 901 Silver and Mi Campo Blanco are good examples of a plata tequila.
- Joven ("young") tequila is also called oro, or "gold" tequila. Joven tequila is unaged and made from a blend of plata and reposado tequilas. Popular Joven tequilas include Jose Cuervo Gold and El Toro Gold.
- Reposado ("rested") tequila is aged in an oak barrel for 2 months up to one year. Reposado tequila is light gold and another good choice for sipping straight or crafting cocktails. Examples of reposado tequilas are 100 Anos Reposado and Familia Camarena Reposado.
- Anejo ("old") tequila is aged in oak barrels for 1-3 years. Most of the tequila on the market today is of the anejo variety. Anejo tequila has a bright golden hue with flavors of citrus, vanilla, and toast. Hornitos Anejo and Roca Patron Anejo are examples of anejo tequila.
- Extra anejo tequila is aged in oak barrels for at least 3 years. These tequilas have a deep gold color and sweet, smoky flavors. Popular extra anejo tequilas include Cazadores Extra Anejo and Qui Platinum Extra Anejo.
- Tahona-processed tequilas are artisanal spirits crafted using a labor-intensive processing method from the ancient Aztecs. These tequilas have more complex flavors but are also more expensive. Roca Patron Silver 100% de Agave Artesanal Tequila is a popular tahona-processed tequila.
How to serve unflavored tequila
