For most cheeses, milk is heated to a high temperature, but for Tommes, the milk is heated to about 88-99°F. The lower heat helps create a smooth, velvety texture. Second, to get the wheel's shape, the curds are pressed by weights or by hand into the wheel mold. 

When serving Tomme, let it sit out of the refrigerator for 45 minutes to an hour, keeping it wrapped until ready to eat.
