The Instacart guide to sirloin tip roasts

About sirloin tip roasts

Sirloin tip roast is also called a beef sirloin tip roast, or a round tip roast. This boneless cut of meat is from the rump and hindquarters of a cow. Since the muscles in this area are used for walking, the beef is lean and not as tender as other cuts of beef, but if cooked properly can be quite tender. Sirloin tip roast is a great value and is quite versatile. It can be cooked whole, cut into stew meat, kabobs, or cubed steak.

Sirloin tip roasts should be slowly cooked to tenderize the meat and bring out the flavors. If serving as the entrée, make a rub of your favorite seasonings and pat onto the roast. The seasonings help tenderize the meat and add flavor as it cooks. Slice the roast into thin strips and serve with potatoes, carrots, sweet potatoes, asparagus, green beans, broccoli, or salad.

Other ways to serve sirloin tip roast are to slice it into smaller pieces to make soups or stews. Simmering the meat tenderizes it and brings out its natural flavors. Adding vegetables or seasonings during cooking enhances the flavor of the meat. To create a savory beef kabob, marinate the cubes for a few hours, add vegetables to the skewer on either side of the beef and place on the grill!

Pairing the right wine with a sirloin tip roast is easy if you follow the general rule of thumb with any meat. If the cut of meat is lean, like a sirloin tip roast, a lighter, acidic, light to medium-bodied red wine will pair nicely. You do not want a big bold wine overpowering your dinner so perhaps a Pinot Noir, Zinfandel, or Syrah.

Sirloin tip roast cooking tips

Since this cut of meat can be a little tough you want to cook it so the meat is tender and juicy. One method is to sear the sirloin tip roast at a high temperature (450 degrees Fahrenheit) for 15–20 minutes. Then lower the temperature to 300 degrees Fahrenheit and bake for another 60 minutes or so depending on the weight of the meat, about 20 minutes per pound.

It is important to not overcook this cut of meat so keep a meat thermometer handy to check the roast. Once the meat approaches your ideal cooking temperature, take the meat out and tent it with foil for about 20 minutes to finish cooking, then carve to serve.

Another way to cook sirloin tip roast is a slower method in a slow cooker where the meat will slowly cook and tenderize. Cook it in a beef stock, either whole or cut up, surrounded by vegetables.

The USDA recommends that you cook a roast to at least medium. Below are temperature guidelines:
  • Rare: 120-125 degrees Fahrenheit. Red on the inside.
  • Medium-rare: 130-135 degrees Fahrenheit. The center is pink, with a little bit of brown towards the outside.
  • Medium: 140 degrees Fahrenheit. Inside is just barely pink and brown around the outside.
  • Medium well: 150 degrees Fahrenheit with no pink and still juicy.
  • Well-done: 160 degrees Fahrenheit and over. It is brown throughout and tends to be drier.

FAQs about sirloin tip roasts

Purchase about 8oz per person for a generous serving.

For more tender meat, it is best to find the direction of the muscle fibers, or the grain of the meat, and then slice against the muscle fibers through to them, as apposed to in line with them. The reason behind this method is cutting through the fibers shortens them, making them easier to chew and more tender. This method applies whether carving the roast before cooking to create kabobs, for example, or after cooking the roast.
