The meat's temperature will continue to rise 5 degrees during this time, so its final temperature should read 135 degrees Fahrenheit.

Allow the cowboy steak to rest so the meat can absorb all the juices,  keeping it flavorful and moist. Cutting the steak too early will cause these juices to pool on the plate instead of inside the meat.
