About fillet of strip

Fillet of strip, also known as New York strip or Kansas City strip, is a tender, moist, and flavorful high-end cut of beef. It comes from the beef short loin subprimal region of the animal. There is typically only one muscle in a fillet of strip, the Longissimus Dorsi, which extends from the hip bone all the way up to the shoulder blade. What gives the fillet of strip its tender flavor is its intramuscular fat, or marbling. Fillet of strips, and many other high-end cuts of beef, are assigned a quality grade that correlates with a specific amount of marbling. Typically, the higher the quality grade the more marbling there is in the fillet of strip. That marbling makes this tender piece of beef more expensive as well.

Not all butchers cut the fillet of strip the same way. It is possible that two other muscles may end up on your fillet of strip: the Multifidus Dorsi and gluteus medius. The Multifidus Dorsi is tender and flavorful as well so if you want that part of the muscle left on, that is entirely up to you. On the other hand, the gluteus medius is a bit tougher and has a vein running through it, which is not appetizing at all.

Fillet of strip steaks can be purchased in a variety of sizes and packages. If you go to your local grocery store or supermarket, you can find them pre-packed in the meat case or you can ask for a freshly cut fillet of strip from the butcher. When choosing your fillet of strips, avoid steaks that are crooked or wavy. They should be wide and mostly straight when cut. You also want there to be at least an eighth of an inch of fat all around the edge. This will give the steak more of that delicious beefy flavor.

Fillet of strip cooking tips

When thinking of fillet of strip, you may be dreaming of steaks on the grill, family lounging by the pool, or friends over for a few drinks during the summer. While grilling is a very popular way to cook fillet of strip, there are several others too.

Fillet of strip can be just as delicious when cooked under the broiler or in a cast-iron skillet on the stove. Some home chefs will season and sear the meat in a well-oiled cast-iron pan and then finish cooking it in the oven. The best thing to do is experiment with a few cooking methods until you come up with one you enjoy the most.

Prepare fillet of strip for cooking by letting the steaks come to room temperature. You'll want to take them out of the refrigerator at least 30 minutes before grilling, roasting, or frying. Pat them dry with paper towels and season with your favorite blend of herbs and spices. One popular yet simple way to season a fillet of strip is to liberally sprinkle both sides with salt, pepper, and garlic powder. Other spices that work well with fillet of strip are basil, cayenne, cumin, dried onion, oregano, rosemary, and thyme.

FAQs about fillet of strip

When shopping at the grocery store for fillet of strip, you may notice that certain portions are labeled "Certified Angus Beef" while others are not. What does certified Angus really mean? Black Angus is a specific breed of cattle. Most of the beef farmed in the U.S. is from Black Angus cows. In order to be labeled as "Certified Angus Beef," a fillet of strip must have come from a Black Angus cow. These animals must meet ten specific criteria in order to be considered Black Angus, such as the quality of the cow's muscle, the thickness of the beef's fat, and the degree of marbling.

Fillet of strip, along with other steaks, are also given a USDA grade of Prime, Choice, or Select. These grades are based on the age of the animal and the amount of marbling in the beef. Prime grade is the highest, and most expensive, quality whereas select grade is the lowest and most affordable cut.
  • Prime grade is the highest quality fillet of strip you can purchase at the supermarket. It typically comes from a young cow, around nine to 30 months old, and has quite a bit of marbling. The age of the cow and the amount of marbling is what gives this fillet of strip its juiciness and flavor.
  • Choice grade fillet of strip is high-quality but has less fat and marbling than a prime cut of steak. While it's still a great cut of meat, it will be less tender and juicy than the prime fillet of strip.
  • Select grade fillet of strip is a tender piece of meat but with less marbling than prime or choice.
