The Instacart guide to filet mignon

About filet mignon

Filet mignon, also called filet de boeuf, filet steak, or eye filet, comes from the middle to lower back of an animal. It's near the spine and kidneys, just past the ribs. Filet mignon is the pointed end of a long muscle called the psoas major. A cut of the entire muscle is called tenderloin for its tender texture. The area around the filet mignon is called the short loin.

Filet mignon means delicate, tender, or fine filet in French. It's the most costly cut of meat because it's the most tender part of the tenderloin. There's also only a small amount of filet mignon on each animal, and the muscle doesn't do much work. Filet mignon usually comes from beef, but you can also find pork filet mignon, sometimes called pork medallions, through Instacart. Filet mignon is sometimes available from other animals, such as lamb, as well.

The easy-to-use, convenient Instacart app lets you order your favorite filet mignon or filet mignon products in just a few minutes and have them brought directly to your workplace or home on the same day! You can also pick up your Instacart order at a store close to you!

Filet mignon cooking tips

Filet mignon is usually a round cut. It's lean, and it has a milder flavor than many other cuts of meat. People often add sauce or wrap it in bacon. You can grill filet mignon or sear it and then roast it in your oven.

Before cooking, take your filet mignon out of your refrigerator and keep it covered on your counter for about an hour. This helps the meat cook more evenly by making the center warmer before putting it in your oven. Then, cover the outside of the filet mignon with olive oil and sear one side in a pan for a few minutes until the surface is slightly charred. Watch the meat carefully to keep it from getting burned, but remember that some browning will improve the taste.

Transfer your filet mignon to a baking sheet, and make sure that the unseared side faces down. It will sear during cooking, making both sides look alike. Preheat your oven to 400 degrees Fahrenheit, and bake your filet mignon for about 10 minutes. Insert a meat thermometer before you put your meat in the oven so you can remove it at exactly the right time.

Rare filet mignon should have a core temperature of around 125 degrees Fahrenheit, and medium-rare is 135 degrees. Medium is about 145 degrees Fahrenheit, and medium well is near 155 degrees. Well-done filet mignon is around 160 degrees. Most meat lovers think filet mignon tastes best medium-rare. After taking the meat out of your oven, transfer it to a plate immediately and cover it with aluminum foil for a few minutes. This prevents the filet mignon from drying out and keeps it from continuing to cook on the baking sheet, ensuring that both sides will be equally done.
