The flat iron steak is a cut developed several decades ago to get a tender steak from an area of the cow that thought too tough to eat. Flat iron steaks are specifically the top muscle blade of the shoulder, or "chuck," region of a cow. Although the chuck region is typically tough, the top blade muscle is not. Flat iron steak cooking tips

Flat iron steaks are thin, allowing them to be cooked quickly, even on a busy weeknight. To prepare this versatile cut of meat for cooking, season it with salt and pepper or your favorite beef seasoning blend. Flat iron steaks are also delicious when prepared with a marinade of vinegar, wine, oil, and citrus. Steaks should marinate for a few hours or overnight.

No matter which cooking method you use, always get your steaks out of the fridge 30 minutes to an hour before cooking. Allowing your flat iron steaks to warm up will help you get a nice sear on the outside. The primary cooking methods for lat iron steaks are:
  • Stovetop: Use a heavy pan or cast-iron skillet when cooking on the stovetop. Get your pan hot before adding the steak to get a good sear on the outside. A little butter and oil can be added during the cooking process.
  • Broiled: Put seasoned flat iron steaks on a broiling pan and cook them three to four inches from the broiler in your oven.
  • Grilled: Create a high heat zone and a medium-low heat zone on your grill. Sear both sides of your flat iron steak on the high heat side, and then move to the medium-low side to finish cooking. When you take your flat iron steaks off the grill, wrap in foil with a little butter and allow to rest.
For the most flavorful steak, cook your flat iron steak until a meat thermometer in the thickest part registers 130 degrees Fahrenheit. Your steak will continue to cook (known as "carryover cooking") as it rests until it reaches 135 degrees Fahrenheit, which is medium-rare.
