About porterhouse steak

Typically marketed as a meal for two people, the porterhouse steak is the unquestionable king of steak. This delicious piece of meat gives you the best of both worlds as it's actually two different cuts. It's a combination of the juicy filet mignon with the tender New York strip, also known as the top loin. As a result, you get almost 2 pounds of meat.

The origin of its name is contentious as several cities and restaurants have sought to claim ownership. The earliest reference of this piece of meat dates back to 1814 when Manhattan porter house owner Martin Morrison began serving rather large T-bone steaks. However, some claim Massachusetts proprietor Zachariah B. Porter named the slab of meat, while others state a Georgia hotel called The Porter House coined the phrase.

Regardless of who named this delicious cut of meat, the steak is one of the most flavorful and tender pieces of meat. It's always cooked bone-in, which allows the meat to cook evenly and retain the flavor and moisture. Depending on the dish, a porterhouse steak can be served sliced or whole.

Porterhouse steak cooking tips

To achieve an authentic porterhouse experience, you should grill the meat. The meat also works well prepared with a broiler or on the stovetop with a cast-iron skillet. With either option, though, make sure the steak is completely thawed to room temperature. Remove it from the refrigerator about 30 to 40 minutes before you plan to cook it. Sprinkle the steak with some seasoning, but make sure to use plenty of salt. Avoid cooking the steak anything higher than medium, which is 145 degrees Fahrenheit.

When grilling the steak, you want to give it a quick sear. Have it cook right before the fat would begin to burn and flip it over to cook the other side. To achieve those sear marks you'd find at a restaurant, rotate the steak about 45 degrees before you turn it over.

After both sides are browned, move the steak to a cooler spot on the grill and cook it to your liking. Remove the steaks when they're 5 degrees less than your desired temperature because the centers will continue to warm as the meat rests. To enhance the flavor, just a few minutes before the steak is done, add a tablespoon of butter to its center.

Once you're done cooking, remove the steak and cover it with foil. Let it rest for about five minutes as this pulls the juices toward the surface. Slicing into the meat before it rests can cause the juices to end up on your plate and not in the steak.

FAQs about porterhouse steak

A T-bone steak is practically the same cut as a porterhouse steak, as they're steaks of beef cut from the short loin. Both pieces also have a T-shaped bone that has meat on either side. The difference is that a porterhouse steak is usually a thicker cut and has more of the filet than the T-bone. That's because a porterhouse is also cut from the rear of the short loin, whereas T-bones are closer to the front.

A porterhouse is typically larger as well. When looking at both, you'll notice the T-bone has a heart shape that looks lopsided. The reason behind this is that it has a smaller fillet. According to the USDA, the porterhouse's filet must be at least 1.25 inches thick, spanning the bone to its widest edge, while a T-bone must be at least 0.5 inches.

When you buy a porterhouse steak, you want one that has a thickness of a minimum of 1.5 inches. Its thickness allows you to cook it without worrying that it's going to dry out. The meat should also have a deep and rich color, devoid of any gray coloring. Also, the fat needs to be white, not yellow. You want good marbling scattered throughout the steak, especially in the loin.

A porterhouse steak can keep in your refrigerator for up to two days. Try to keep it in the original packaging if possible. If you want to store it longer, package it tightly in butcher paper or plastic wrap, and put it in the freezer. The steak will keep for up to three months. Anything longer can cause freezer burn.
