About Baldwin apples

Baldwin apples are also called Butters apples, Calville Butter apples, Felch apples, Red Baldwin's Pippin apples, or Steele's Red Winter apples. They're mostly red, and some parts of the skin are light green or yellow. They vary in size from medium to very large, and some have subtle red stripes. Some people call Baldwin apples Woodpecker or Pecker apples, because woodpeckers tend to spend lots of time near the trees.

Baldwin apples are harder than many other varieties, and they have relatively thick skins. This means that orchards can ship them for long distances without causing bruising or other damage. It's also more resistant to pests than many other apple varieties.

William Butters discovered the Baldwin apple around 1740 as a wild seedling near what is now Wilmington, Massachusetts. After he bought the farm of John Ball, where the apple grew, he transplanted the tree nearer to his new home. In the late 18th century, a surveyor discovered the apple tree and brought it to the attention of Colonel Loammi Baldwin, a Revolutionary War veteran who crossed the Delaware River with George Washington. He was also Johnny Appleseed's second cousin.

Baldwin helped introduce the new apple to the rest of the United States. The Baldwin apple eventually became the most popular type of apple in the country, and then it was replaced by the Red Delicious variety. A 5-foot-stone monument to the Baldwin apple stands on Chestnut Street in Wilmington today. There's also a statue of Loammi Baldwin in Woburn, Massachusetts. A plaque at the base reads, “Disseminator of the apple in honor of him called the Baldwin.”

How to pick out Baldwin apples

Baldwin apples are usually ready for harvest in October or November. Immature apples are mostly green or yellow, and they develop more blush or red hues as they ripen. The ground color, the shade of the skin immediately around an apple's stem, is green when the apple isn't ripe yet. It will gradually turn yellow as the rest of the apple turns red.

Baldwin apples become more aromatic as they ripen, and their sugar content increases. These apples should feel very firm, and their flesh should be a creamy white color when you cut them open or bite into them. The seeds of unripe apples are white, and they should be brown when the apples are ready to eat. You can store Baldwin apples for several months in your refrigerator, and they don't spoil easily. However, you should avoid any apples with soft spots or blemishes. If they're too ripe, they may taste mealy or mushy.

How to prepare Baldwin apples

These fruits taste sweet, juicy, and crisp when they're fresh, and their hard flesh means they retain their shape when cooked. They taste aromatic and spicy, and their sweet and tart flavors balance each other well. You may detect notes of apricot, nutmeg, and pear.

Baldwin apples are perfect for pies, turnovers, tarts, and other baked goods. They're also used for apple juice and apple cider. They taste great in traditional or fruit salads, and you can add chopped Baldwin apples to muffin, cake, or scone batter for more moisture and a sweeter taste. It's ideal for preserves, jellies, jams, or savory sauces as well. You can make dried Baldwin apples by baking thin slices at 200 degrees Fahrenheit for about two hours.
