About Ruby Frost apples

Cornell University introduced the Ruby Frost apple in 2013. The Ruby Frost is a cross between a Braeburn apple and an Autumn Crisp apple. Primarily grown in New York, the Ruby Frost is large with a round, uniform shape. The thick skin is yellow-green with a deep red blush. The flesh is white and crisp, with a perfectly sweet-tart flavor, similar to a Gala or Empire apple.

Ruby Frosts are harvested in late fall. They are kept in cold storage for a few weeks to improve their flavor and come on the market in winter. Ruby Frost apples are available from January through April.

How to pick out Ruby Frost apples

Ripe apples are firm, not mushy or soft. The skin should have a bright color and be free of bruises, cuts, or deep wrinkles. Apples should smell pleasant and fresh, never spoiled.

How to store Ruby Frost apples

Ruby Frost apples keep very well as long as you store them correctly. Apples maintain their flavor and texture best in a cool, humid environment. The crisper drawer of your fridge is perfect for short-term apple storage. If your home gets dry in the winter months, consider misting the apples with water every few days to add moisture to the crisper drawer. Keep your apples in one drawer and avoid mixing them with other fresh produce. Apples release ethylene gas that can speed up the ripening (and spoiling) of fruits and vegetables.

Ruby Frost apples can also be put in long-term storage and stay fresh for many months. Long-term storage requires a cool, dark location, such as:
To prepare your apples for long-term storage, look for unblemished apples with the stems still attached. Bruised or cut apples can rot quickly and cause all of your apples to spoil. Apples should not touch each other in storage. Protect each apple by wrapping it in a newspaper, paper grocery bag, paper towel, or butcher paper.

You can also store apples in a crate filled with clean straw or sawdust, layered in a medium-sized cardboard box or wooden crate. It is better to use several small or medium boxes rather than one large box. Check apples regularly for rot and get rid of any that are getting soft or discolored. If your home is dry, mist apples with water every week or add a humidifier to your storage space. Move the apples you need for each week into your home fridge.

FAQs about Ruby Frost Apples

Ruby Frost apples are juicy and refreshing when eaten fresh. They brown slower than other apple varieties due to their high levels of vitamin C, making them perfect for use as a snack or in a salad. Ruby Frost is also tasty when made into applesauce or baked into a pie. Cinnamon, cloves, nutmeg, and nuts complement Ruby Frost's flavor.

Ruby Frost apples can be frozen for 6-9 months without losing their signature sweet-tart flavor. Freezing does, however, change the texture. Frozen apples are typically spongier and softer, making them perfect for cooked dishes such as pies, cobblers, applesauce, and oatmeal.

You can freeze a Ruby Frost apple whole, but processed apples are easier to use straight from the freezer. Peel, core, and cut your apples into slices. Dip the apples in water with lemon juice to prevent excessive browning. To keep the apples from clumping together, lay the slices on a baking tray before putting them in the freezer. Once frozen, transfer the frozen apples to a freezer bag.

Ruby Frost apples have lots of vitamin C, potassium, boron, and several phytochemicals. They also provide 20% of your daily fiber needs. The average Ruby Frost apple has 100 calories.
