About cherries
Archaeological evidence shows that cherries have been around since prehistoric times, but the cherries that we are familiar with came to American in the 1600s. There are over 1,000 different varieties of cherries, but all fall into two major categories: sweet and sour. Most sweet cherries are grown in California, Oregon, and Washington, while tart cherries usually come from Michigan and Wisconsin. Sweet cherries are made to eat fresh as a healthy snack, while tart cherries are for cooking and baking because they will hold their shape better when cooked. The tartness also makes it easier for bakers to adjust the sweetness level of their baked goods.
Some of the most common types of cherries that you will come across include:
Sweet
- Bing cherries: Bing cherries are probably the most popular cherry. They are dark red, round, and sweet. Just pop these in your mouth for an explosion of flavor.
- Ranier: Rainier cherries have a golden color with a yellowish tint. These are also super sweet and made for eating raw.
- Lambert: The Lambert is a large, purple cherry with pale flesh. It is very sweet and juicy.
- Lapin: The lapin cherry is very similar to the Bing.
- Royal Ann: Also referred to as the Napoleon cherry, this large, yellow-skinned variety has a firm but sweet and juicy flesh. Royal Ann cherries are also good for baking, and are a good middle ground between super sweet and tartness.
Tart
- Montmorency. These are the most common cherries for pies. They are round, medium-sized, and have a bright red color with soft, yellow flesh.
- North Star: North Start cherries are similar to Montmorency with bright red skin and juicy flesh.
- Early Richmond: This is a small, bight red cherry with a tart, acidic flavor. These are often used for jams, preserves, and jellies.
- English Morello: The English morello has a large, juicy cherry with a deep reddish skin with a slightly tart taste. It freezes well and a great choice for pie.

How to pick out cherries
When picking out a good bag of cherries from the store, look at the green stems, the color of the fruit, and the firmness. Dark, sweet cherries should have a dark mahogany color, while Ranier and Skylar Rae should have a yellowish hue. Make sure the fruit is firm when touched, and check the overall appearance. Look for plump, smooth, and unblemished shiny skin.

FAQs about cherries
Cherries have a high concentration of plant compounds, which help provide many health benefits. The benefits vary depending on the cherry, but all varieties are full of vitamins and minerals and high in antioxidants, which help fight oxidative stress. Moreover, cherries are high in anti-inflammatory compounds that can help relieve sore muscles due to exercise or other factors.
Cherries have pits, which you need to remove before eating them. If you have a cherry pitter, it makes the process easier. You can just remove the stem by twisting it off and then place the cherry on its side into the pitter. Press down the clamp and then release it to get the pit out.
If you don't have a pitter, you can use a chopstick and a bottle. Remove the stem, place the cherry on top of an empty bottle, and use the chopstick's smaller end to push the pit out the other side of the cherry.
