  • Ranier: Rainier cherries have a golden color with a yellowish tint. These are also super sweet and made for eating raw. 
  • Lambert: The Lambert is a large, purple cherry with pale flesh. It is very sweet and juicy. 
  • Lapin: The lapin cherry is very similar to the Bing. 
  • Royal Ann: Also referred to as the Napoleon cherry, this large, yellow-skinned variety has a firm but sweet and juicy flesh. Royal Ann cherries are also good for baking, and are a good middle ground between super sweet and tartness.

Tart

  • Montmorency. These are the most common cherries for pies. They are round, medium-sized, and have a bright red color with soft, yellow flesh. 
  • North Star: North Start cherries are similar to Montmorency with bright red skin and juicy flesh. 
  • Early Richmond: This is a small, bight red cherry with a tart, acidic flavor. These are often used for jams, preserves, and jellies.
  • English Morello: The English morello has a large, juicy cherry with a deep reddish skin with a slightly tart taste. It freezes well and a great choice for pie.

How to pick out cherries

When picking out a good bag of cherries from the store, look at the green stems, the color of the fruit, and the firmness. Dark, sweet cherries should have a dark mahogany color, while Ranier and Skylar Rae should have a yellowish hue. Make sure the fruit is firm when touched, and check the overall appearance. Look for plump, smooth, and unblemished shiny skin.
