You can recognize bacon avocados by their oval shape and smooth, thin skin that appears dark green with faint speckles. Once you open a bacon avocado, you'll reveal pale yellow-green flesh. Bacon avocados are not quite as oily as Hass avocados, but they're just as delicious! A buttery, creamy texture makes the bacon avocado a popular choice. Bacon avocados are about 6 to 12 ounces, and they have a large central pit.

Avocados belong to the Lauraceae family, a plant family that includes camphor, edible cinnamon, bay leaf, and sassafras. Avocados are actually classified botanically as berries. Bacon avocados come from medium-sized trees that can grow to an average height of 15 to 20 feet. The trees have glossy, dark green leaves, and the avocados they yield are a late-producing variety. These trees also yield large amounts of avocados. The bacon avocado is a hybrid of two Mexican avocado varieties. Though almost all types of avocado trees grow well in places with mild winters, bacon avocados are more cold-resistant than other avocado cultivars. That makes bacon avocados a popular type to grow in areas that have lower temperatures in the winter.

Bacon avocados are generally available in mid-to-late winter. As bacon avocados don't turn black when ripe, you'll need to touch one of these avocados to see if they're becoming soft. When you gently press the avocado in your palm, it will give just a little if it's ripe. Avocados tend to be quite hard when they're first picked from trees, and they can take a week or longer before they soften enough to eat.

The bacon avocado's large central pit has a tendency to make these avocados' seed cavities mold. This makes bacon avocados highly perishable when ripe.

You can store avocados at room temperature until they're fully ripe, but if you want to slow the ripening process, store your avocados in the refrigerator right away. Avocados don't keep ripening when refrigerated. A ripe, whole avocado will last for around two to three days in your refrigerator. If you cut the avocado, it will last for only a day or so.

Avocado flesh will darken when it's exposed to air. You can sprinkle vinegar or lemon juice on cut avocados and then cover them in plastic wrap before refrigerating to prevent discoloration.
