The Instacart guide to red corn

About red corn

A type of sweet corn, red corn is an interesting grain crop that can add flavor and color to your favorite recipes. You can identify red corn from its lime-green husks and, of course, its red kernels. The kernels have a deep red brick color interlaced with cream and pink. When cooked, red corn's flavor has a sweetness and nuttiness that makes it stand out from its more common corn siblings.

How to pick out red corn

Red corn is freshest during the summer and early fall. It can be difficult to tell if red corn is at its prime because of the husk, but you'll want to choose ears that still have juicy kernels. Red corn matures faster than white or yellow corn and, as it grows older, it loses moisture. This can leave you with red corn that has higher levels of starch and tough kernels.

Take a look at the fringy tassels coming out of the top of the red corn. If they're dry and black, don't buy them. Fresher ears will have brown, sticky tassels. The husk should be wrapped tightly around the corn cob and still have its lime green color.

How to cook with red corn

For the most part, any recipe that calls for corn can be made with red corn. Keep in mind that red corn often contains more starch than white or yellow corn.

Just like white or yellow ears of corn, you should remove the husk from your red corn before you cook it. Though you can cook the corn husk and all, it will take a significantly longer time to cook. Make shucking your corn easier by cutting off the end of the corn opposite of the tassels and microwaving the corn for about 45 seconds. This should make removing the husks much easier. If you want to cut the corn kernels off the cob, you don't have to cook the corn before you do so.

Once you have your raw red corn, you can cook it in any number of ways. To boil it, place it into boiling water for four minutes or until it's tender.

You can grill corn with or without the husk, but if you choose to leave it on, you should partially shuck the corn to remove the silks underneath. Pull the husk back over the corn and grill for about 10 minutes. If you want to give your kernels a charred taste, you can broil them in the oven until they reach your desired consistency.

You can also bake red corn. Remove the husks and spread your butter and spices over the cob. Wrap each cob in aluminum foil and bake at 425 degrees Fahrenheit for 20-25 minutes.

FAQs about red corn

The trick to storing corn is keeping it from drying out. If you're not preparing it for today's dinner, wrap it tightly in a plastic bag and keep it in the refrigerator. We suggest not purchasing corn you don't plan on eating for the next three days. If you can't get around to preparing your corn, you can put it in the freezer to avoid it turning into an unappetizing starchy treat.

If you're going to freeze corn, you'll likely have the best results from blanching either the whole cob or the kernels before you place it in the freezer. Boil some water, and boil the corn for a minute or two. Then, place the corn in an ice bath to stop the cooking process. Dry them a bit, place them in freezer bags, and keep them in the freezer for up to one year.
