The leaves should have colorful, crisp leaves devoid of bruises or cracks, which can mark poor handling or age. You may want to examine below the first layer of leaves to ensure that the cabbage is healthy and consistent throughout. Check the bottom of the cabbage head to ensure that the leaves are tightly packed. The leaves of older cabbages tend to separate from the stem as the cabbage ages and loses its internal moisture.
