The Instacart guide to sausages
A staple of numerous cuisines, sausage consists of a variety of meats in different flavors. It typically contains ground meat, usually pork, combined with salt, fat, seasonings, preservatives, and fillers. You can also find sausage made out of beef, veal, lamb, poultry, or a combination of these meats. The links use either natural casings made out of animal intestines or artificial ones.
About sausages
There are countless varieties of sausage available, with some having a more mild flavor while others are sweet. The four common categories of sausage include the following:
- Fresh: This type of sausage is a mixture of ground meat, fat, and spices that are not cured or cooked. It's usually sold in casings, but you can also purchase fresh sausage in patties or loose, like ground beef. This is the most basic form of sausage, and it includes Polish sausage, bratwurst, kielbasa, sweet, Italian, andouille, and bockwurst.
- Cooked:Â Cooked sausage is a type of fresh sausage that has already been cooked thoroughly, so you only need to reheat it. It's available in links or patties.
- Cooked and Smoked: These types of sausage have been cooked using smoke or fermented. Types of sausage in this category include bologna, summer sausage, and bratwurst.
- Semi-Dry and Dry: A semi-dry or dry sausage is ready to eat either cold or warm. Semi-dry sausages are usually partially dried but heated enough to cook the meat. Dry sausages are smoked, unsmoked, or cooked. You will find mortadella, chorizo, pepperoni, and salami in this category.
Sausage cooking tips
When preparing sausage, make sure you have a thermometer to ensure the meat reaches a safe-to-consume temperature of 160-165°F. Anything higher may cause the fat inside the sausage to melt and drip out, giving you a drier piece of meat. Some of the most common ways of cooking sausages include the following:
- Boil: Boiling is one of the easiest ways to prepare sausages. Simply place each sausage into a pot of boiling water, and let them simmer. Precooked sausages should take about 10 minutes, while raw ones may take up to 30 minutes.Â
- Broil: Set your oven to broil and place the sausages in a shallow broiler pan. Place the pan about four inches from the heat source, and cook them for 10 to 15 minutes. Turn the sausages at the five-minute mark.
- Grill: This is one of the most popular ways to prepare sausage, but it can be challenging because you want to make sure they cook thoroughly without burning the outside. You can always sear-roast on the grill by starting them over indirect heat and leaving them on there until cooked completely. Brown the sausages quickly over high heat to finish. Let the sausages rest for at least 10 minutes to let the juices redistribute.
- Pan Fry: Another common way to prepare pre-cooked sausages, pan-frying gives them a crisp exterior texture. Place them in an unheated frying pan and cook them until nicely browned. If the sausages weren't pierced before the cooking began, pierce the casings to prevent them from splitting open.
- Roast: Cooking your sausages in the oven can free up stovetop space. Set the oven at 350°F, and cook your sausage links for at least 25 minutes. Make sure you turn them at the 10-minute mark.
